LCD – All Recipes, Salad
2 cups snow peas
1 red leaf lettuce
1 large ripe avocado peeled and diced
2 cups cherry tomatoes halved
1/2 cup alfalfa sprouts
4 sprigs fresh basil finely chopped
Salad dressing
(GF, DF, NF, YF, V)
Top and tail the snow peas and steam for approximately 3 minutes until just tender, then plunge into icy water for 30–40 seconds to prevent overcooking. Drain.
Tear the washed and dried lettuce leaves into bite-sized pieces and arrange in the bottom of a salad bowl.
Add avocado, tomatoes, snow peas, sprouts and basil.
Choose one of our lovely salad dressings and pour over the salad.
